Every morning, at 7 a.m., Eric and I get home from the gym and I make us breakfast. It’s almost always the same breakfast – hash browns, over hard eggs, and bacon. And it hits the spot every time. But sometimes I just need something different. I only have 30 minutes to make breakfast in the morning, and it feels like there is a limited amount of things to make.
I actually got the idea for these ham, egg and cheese puff pastries because I saw someone making those breakfast-style egg “muffins.” Egg muffins are essentially scrambled eggs, often mixed with meat and/or vegetables, and baked in muffin tins. I’m not a huge fan of them because I find them unsatisfying and the texture to be lacking. But then I thought, why not add some puff pastry to the muffin tin? The flakey, buttery pastry will help break up all that egg and make for a more satisfying breakfast.
If you use store-bought pastry, this breakfast is super quick and easy to make. If you’re in a time crunch in the morning, you can also prep them ahead of time. Just prepare the egg filling the night before, then all you’ll have to do in the morning is place the puff pastry in the muffin pan, add the egg filling and bake for about 25 minutes. So simple.

Substitutions
- Ham: can be substituted for pre-cooked bacon, Canadian bacon or pre-cooked ground breakfast sausage
- Sharp cheddar cheese: can be substituted for any shredded cheese of your choice
Products I love
- Puff pastry: the reason I love these ham, egg and cheese puff pastries for breakfast is because they are so quick and easy. You can of course make your own pastry, but if you’re looking for a great store-bought option, I really like Dufour Classic Puff Pastry. The ingredients are simple – no preservatives or fillers. I found it at my local grocery store.
- Salt. I use Jacobsen Salt Co. or Icelandic Saltverk for a flaky salt. Both of these brands have been tested by Tamara Rubin for low levels of lead.
- Ham: I use North Country Smokehouse. This is a company local to me and their products are great, especially their bacon.
- Large rimmed baking sheets. These are big, heavy duty, and hold up well over time.
