Cadbury Egg Cookies

Happy Easter! Let’s turn a classic seasonal candy into a delicious dessert. These Cadbury egg cookies are soft and tender and speckled with crush Cadbury mini eggs. You should be able to easily find this candy at most major grocery stores, drug stores or supermarkets.

Kitchen essentials

  • A mixing bowl
  • A silicone spatula or a large mixing spoon
  • Measuring cups/spoons
  • A stand mixer or hand mixer
  • A baking sheet
  • A ziplock bag and a meat tenderizer (to crush the Cadbury eggs)
  • A cookie scoop (recommended)

Substitutions for these cadbury egg cookies

  • White sugar: can be substituted for equal parts cane sugar.

Ingredients

  • 0.5 cup butter, softened

  • 0.5 cup white sugar

  • 0.5 cup light brown sugar, packed

  • 1 tsp vanilla extract

  • 1 large egg

  • 1.5 cups all purpose flour

  • 0.5 tsp baking soda

  • 0.25 tsp baking powder

  • 0.5 tsp salt

  • 1 cup Cadbury mini eggs

Directions

  • Preheat the oven to 350 F.
  • Use a hand mixer or stand mixer with the whisk attachment to cream together the butter, white sugar and brown sugar. Add in the egg and vanilla extract and mix again.
  • Using a large spoon or a silicone spatula, mix in the dry ingredients – flour, baking soda, baking powder and salt.
  • Crush the Cadbury eggs. I placed them in a ziplock bag, sealed it well, and hit them with a meat tenderizer. Add the crushed eggs to the dough and mix again.
  • Use a cookie scoop to place same-sized balls on a baking sheet, a couple inches apart. Bake for 8 minutes. They should just barely be browned on the edges. Allow to cool slightly and enjoy!
