This simple maple vanilla marshmallow recipe is from Noelle Kovary (you can find the recipe and more on her instagram @noellekovary).

The great thing about these marshmallows is that the main ingredient is grass-fed beef gelatin. Traditional nose-to-tail diets contained a lot more gelatin. Today’s modern diet contains mostly muscle meats. To counterbalance that, it’s a good idea to add gelatin to your life, especially with a meat-based meal. A diet high in gelatin will improve your skin, hair, joints and gut. It’s also a good source of copper and protein. How to roast marshmallows (without a campfire)

Roasting adds a depth of flavor to these already delicious marshmallows.

To roast: put your marshmallows on a heat-safe plate and remove all flammable items from the surrounding area. Keeping the flame at a distance, slowly roast the top of the marshmallows until golden brown using a culinary torch. Keeping the flame at a distance will help warm the entire marshmallow without the top browning too quickly.

Use these roasted marshmallows to make s’mores indoors or make a delicious cup of espresso hot cocoa.

Kitchen essentials
  • A small saucepan
  • A small bowl
  • Measuring spoons
  • A stand mixer or hand mixer
  • A storage container (I used a 9″ x 6″ baking dish)
  • A culinary torch (for roasting)

Ingredients

  • 1 cup water

  • 6 tbsp gelatin

  • 1/2 cup pure maple syrup

  • 1 tsp vanilla extract

Directions

  • Allow the gelatin to bloom. Add the water to a bowl and slowly sprinkle on the gelatin. Let it sit for a few minutes to bloom. The mixture will get very thick. Give it a quick mix to make sure all the gelatin has been incorporated.
  • Melt the gelatin. Add the bloomed gelatin to a small saucepan on medium-low heat, then stir in the maple syrup and vanilla extract.
  • Once the mixture has become liquidy, use your stand mixer or hand mixer to mix. This part can be time-consuming and will probably take about 15-20 minutes. You know you are done when the mixture is light, fluffy and forms peaks.
  • This step is time sensitive! Quickly transfer the mixture into a flat baking dish and evenly smooth it out (I used a 9″ x 6″ baking dish but you can use a smaller one for more cube-shaped marshmallows). If you don’t transfer the mixture quickly, it will start to harden and transferring will be challenging.*
  • Chill. Transfer your marshmallows to the fridge and allow them to chill for about 4 hours before cutting into squares and serving. Enjoy (see above for how to roast)!

Notes

  • *If the mixture hardens before you transfer it, you’ll have to place it back on the stove top, let it melt, and mix again.
  • The nutrition label is based on two marshmallows, 8 servings total in the original recipe as written.
