Easy yet delicious banana, blueberry and kale smoothie. This smoothie is being made at least once a week in my household. Not only is it packed with nutritious ingredients, but it is one of my favorite flavor combinations ever! Smoothies have been my go-to breakfast for awhile now. Not only are they super quick to make, but they are light, filling, give me energy throughout the day, and they don’t make me bloated – who wants to start their day bloated?!
But the very best reason to start your day with a smoothie is for it’s nutritional profile, thanks in large part to the leafy greens. Let’s take a closer look at this smoothie in particular. Just this one kale smoothie (using soy milk as the nondairy milk of choice) has roughly all your daily recommended vitamin B6, vitamin K and manganese, as well as 60% of your vitamin A, 66% of your vitamin C, 65% of your copper, and 61% of your potassium. It’s also incredibly high in B vitamins, magnesium, folate, iron and fiber. Hard to start off the day with something better than that!
Cooking essentials:
- A blender
Substitutions:
- Medjool dates: you could omit entirely or use pure maple syrup for extra sweetness. Make sure your medjool dates are pitted!
- Kale: any dark leafy green will work just as well.
- Plain nondairy milk: I prefer plain soy milk in my smoothie, but you can use any type of plain nondairy milk of your choosing (soy, oat, almond, cashew, coconut, hemp, etc.).
- Frozen blueberries: if you don’t have frozen blueberries, you can instead use fresh blueberries, but you will need to add 1-2 cups of ice to make the smoothie colder.
