Chunky Monkey Smoothie (Healthy + Vegan!)

I have yet to meet someone who doesn’t enjoy a peanut butter smoothie, and for good reason! This chunky monkey smoothie is a sweet, creamy peanut butter dream. I love enjoying one for breakfast, lunch or if I’m craving a late-night snack. And the best part is it only requires 5 ingredients that you probably already have in your home.

Is a chunky monkey smoothie healthy? Yes!

  • This smoothie makes a great meal replacer and will keep you full for hours.
  • Just one smoothie has almost 17 grams of protein, making it a great post workout meal.
  • If you’re on a weight loss journey and looking for a lower calorie smoothie, use less peanut butter and no maple syrup.

Kitchen essentials:

  • A blender or food processor

Substitutions:

  • Frozen bananas: I recommend using frozen bananas for a better consistency, but if you don’t have any on hand, you can use non-frozen bananas with a couple cups of ice.
  • Plain unsweetened oat milk: you can use any non-dairy milk of choice. I prefer oat milk for it’s extra creaminess, as well as soy milk and cashew milk.
  • Pure maple syrup: can be substituted for another liquid sweetener like agave nectar or date syrup as well as coconut sugar or cane sugar. Add sweetener in small increments and adjust as needed.

Ingredients

  • 2 bananas, peeled, cut into chunks and frozen at least overnight (see substitutions above)

  • 1/2 cup plain unsweetened oat milk (or nondairy milk of choice)

  • 3 tbsp natural creamy peanut butter

  • 1-2 tbsp pure maple syrup (depending on your desired sweetness)

  • 1/2 tbsp vanilla extract

Directions

  • Blend! Add all your ingredients to a blender or food processor and blend until fully combined, about 1-2 minutes. Enjoy!
