About this roasted peach lemonade

This drink screams summer and it is such a treat to drink on a hot day. It’s perfectly sweet, refreshing and thirst-quenching. You can make it and keep it in the fridge for about a week, but it is also a great drink to bring to the next family BBQ.

Why roast the peaches?

Roasting intensifies the natural sugars in peaches, making them even sweeter and softer. Once they come out of the oven, they taste like peach ring gummies that make me nostalgic for childhood.

Kitchen essentials
  • A baking sheet
  • Measuring cups + spoons
  • A small bowl
  • A small saucepan
  • A blender
  • A large pitcher (I used a 64 oz mason jar)
  • A wooden spoon
Substitutions

Cane sugar: can be substituted for any white sugar. I don’t recommend using brown sugar as it will change the color of the roasted peach lemonade.

Homemade Roasted Peach Lemonade

Ingredients

  • 6 small peaches, halved and pitted*

  • 1 tbsp cane sugar

  • 9 lemons**

  • 1 1/2 cups cane sugar

  • 6 cups water

  • ice

Directions

  • Preheat oven to 400 F. Put the halved and pitted peaches on a baking sheet cut side up. Sprinkle the 1 tbsp of sugar on the peaches. Bake for 25 minutes.
  • In the meantime, prep the simple syrup. In a small saucepan on medium heat, add 1 cup of water and the remaining cane sugar. Once all the sugar has dissolved – about 5 minutes – take the saucepan off the heat and allow it to cool.
  • Juice all the lemons into a small bowl and strain out the seeds.
  • Peel and blend the peaches. Once the peaches have come out of the oven and are cool enough to touch, you should be able to effortlessly remove the skins. Blend the skinless peaches with the lemon juice. At this point, you can strain the mixture if desired – I choose not to.
  • Combine it all. In a large pitcher (I used a 64 oz. mason jar), add the remaining 5 cups of water, the simple syrup and the peach/lemon mix and stir with a wooden spoon. Serve over ice or transfer to the fridge until ready to drink. Enjoy!

Notes

  • *To pit the peaches: cut peach in half and use a knife to carefully cut around the pit. It should pull right out after that.
  • **9 lemons should come to about 1 1/2 cups lemon juice. You may need more or less depending on the size of the lemons.
  • The nutrition label is based on a 1 cup serving size.
