I can’t be the only one that craves something fresh and juicy in the summertime. This vegan watermelon salad, complete with fresh basil and balsamic glaze, is the perfect way to quench your thirst and stay hydrated in the heat. The sweetness from the watermelon combined with the savory flavors of basil, lime and balsamic is a unique combination that I’ve really grown to love. I hope you do, too!
My favorite part about this salad is how quick and simple it is too make. The process is as simple as chopping up the watermelon and the basil and tossing it all together in a bowl. All you will need is 4 simple ingredients and about 5-10 minutes of time.
What does balsamic watermelon salad go with?
Watermelon salad can have so many uses in a healthy summer diet. Here are some of my favorite ways to pair this salad:
- As a dinner side, it pairs well with homemade veggie burgers or veggie and tofu skewers.
- As a lunch side, it pairs well with a large leafy salad.
- Simply on it’s own for breakfast or a snack.
- The perfect potluck BBQ item! Quick, simple, and fairly cheap.
Can I make watermelon salad ahead of time?
Most fruit is best the day it is cut up. This watermelon salad is no exception. I recommend making it the day you plan on serving it. To keep it extra fresh, I highly recommend drizzling on the balsamic glaze right before serving. The glaze will eventually soak into the fruit and dampen it’s freshness.

- A cutting board
- A large serving bowl
Substitutions:
- Lime juice: can be substituted with equal parts lemon juice. I recommend using fresh lemon or lime juice as opposed to bottled. Fresh juice holds a much brighter and stronger flavor. If using bottled juice, you may need to use more than what is called for.
- Fresh basil: I do not recommend using dried basil, but it can be done if in a pinch. Fresh basil can be substituted for fresh mint.
- Balsamic glaze: I like to use Filippo Berio Balsamic Glaze, but you can use any glaze you prefer. Note that balsamic glaze is much different than balsamic vinegar, as it is much thicker and sweeter.
