Cilantro lime rice is one of my favorite ways to do rice. Use it as a side dish or in burrito bowls or tacos. This dish can easily be customized to use brown rice or cauliflower rice.

Ingredients

  • 1 cup uncooked white jasmine rice

  • 1 1/2 cups water

  • 1/2 cup fresh cilantro, chopped

  • 3 tbsp fresh lime juice*

  • 1 tsp lime zest

  • 1/2 tsp salt

Directions

  • Prepare the rice. Use a fine mesh strainer to rinse the rice before cooking. This will make the cooked rice less sticky.
  • Cook the rice. In a medium saucepan, add the rice and water and bring to a boil. Once boiling, cover and reduce heat to a low simmer. Cook until all the water has been absorbed, about 15 to 20 minutes.
  • Add the remaining ingredients. Once the rice is cooked, allow it to cool for 1 to 2 minutes. Then add the cilantro, lime juice, lime zest and salt. Stir to combine and enjoy!

Notes

  • The original recipe makes roughly 2 1/2 cups of cooked cilantro lime rice, about 2 large servings or 4 small servings. The nutrition label is based on only 2 servings total.
  • *I don’t recommend using bottled lime juice because it is less potent. If you do use it, you will likely need more than what’s called for.
  • Leftovers can be kept in the fridge for 4 to 5 days.
