Melt-in-your-mouth chocolate fudge with a coconut pecan topping. This German chocolate fudge checks all the boxes – it uses simple ingredients, requires no fancy equipment, comes together in 1 bowl and is raw, so no baking required! Ready within 20 minutes.

Ingredients

    For the fudge base:
  • 1/2 cup nondairy milk of choice
  • 1/2 cup cashew butter
  • 1/4 cup pure maple syrup
  • 2/3 cup cacao powder
  • 1/2 cup almond flour
  • 1/2 tsp sea salt
  • For the German chocolate topping:
  • 1/2 cup cashew butter
  • 1 tbsp pure maple syrup
  • 1/4 cup chopped pecans
  • 1/4 cup shredded unsweetened coconut
  • 2 tbsp nondairy milk of choice
  • 1/4 tsp salt
  • Dash of cinnamon (optional)

Instructions

  1. Line a loaf pan with parchment paper and set aside.
  2. For the fudge base:
  3. Combine the milk, cashew butter and maple syrup in a mixing bowl. Slowly mix in the cacao powder, almond flour and salt. The dough will be pretty thick. Use a spatula to press the dough into the loaf pan. Set aside.
  4. For the German chocolate topping:
  5. Combine all the ingredients for the topping and spread evenly over the fudge base. Transfer to the freezer to set for at least 2 hours. Cut into 8 squares and enjoy!

Notes

~ Store in the freezer. If the fudge is too hard when taking out of the freezer, thaw at room temperature for 10 minutes.

Substitutions:
  • Nondairy milk: you can use any milk of your choice – coconut, oat, soy, almond, etc.
  • Cashew butter: any nut or seed butter will work, but will slightly change the taste.
  • Pure maple syrup: substitute for agave nectar or date syrup.
  • Chopped pecans: substitute for chopped walnuts, hazelnuts, almonds or any nut of choice.
